Tropical Porridge

With the amazing weather we’ve been having the past few weeks this recipe is perfect if you want upgrade your porridge to a lighter Summer version. With mango and hints of coconut giving a tropical vibe you would be forgiven for thinking that you’re having breakfast on a Caribbean beach (or maybe just still dreaming…). Give this a go though, as the soluble fibre in porridge and the potassium in fruit are great for lowering cholesterol and blood pressure so your heart will love it just as much as your tastebuds!

Ingredients (for 1):

1/2 cup oats (I used jumbo oats but you can you whatever you have)

1/2 cup milk (I used low fat supermilk but again, use what you have)

1 teaspoon honey

dash of vanilla extract

1 heaped teaspoon desiccated coconut

handful of blueberries

chopped mango (I used half a mango but use as much as you want or have)

Method:

Add the oats, milk, honey, vanilla extract and coconut to a saucepan, bring to a light boil then simmer for a few minutes, stirring constantly.

Mid way through cooking, stir in the blueberries and mango (I added them midway as opposed to just adding them as a topping after as I find they release their flavours better this way).

Place into a bowl, top with a bit more coconut and honey and enjoy!
