These banana oat pancakes are one of my favourite weekend breakfasts. Mainly because they’re quick, easy, healthy and I usually have all the ingredients to hand.
They’re super healthy with oats being a great source of soluble fibre which can help lower cholesterol, banana being a great source of potassium which can help lower blood pressure and eggs which are a great source of protein and packed full of vitamins and minerals. Top these stacks of beauty with some healthy berries, Greek yoghurt and an optional drizzle of honey for a low sugar alternative when you’re craving some pancakes!
Ingredients (serves one – if you want to make more you can easy multiply the ingredients):
1/4 cup Flahavans porridge oats
1/4 teaspoon baking powder
Pinch of salt
Frozen mixed berries (put in a bowl and heat in the microwave for a minute or so).
Blend all of the above in a NutriBullet or blender.
Fry in small batches in a bit of coconut oil – this way they are easier to flip and make a nice stack. You can also cook about three on the pan at once.
Stack and top with some warm berries, Greek yogurt (I used Glenisk Greek yogurt), honey and shredded coconut.
