Breakfast Bagel

If you’ve got a little extra time on the weekend and want to prepare an impressive yet simple breakfast then this is perfect. It’s got the a great mix of protein, good carbs and healthy fats so will also set you up for the day. I’ve used smoked trout but you could also use smoked salmon and both are a great source of omega 3 fatty acids and vitamin D. I poached the eggs in the microwave and made a mock Hollandaise sauce as I didn’t want to be standing over a saucepan for 20 minutes or so making the real deal!




Brown bagel – toasted.

Smoked trout (or salmon)

Poached egg

Grilled red pepper

half a ripe avocado

Mock Hollandaise sauce:

Teaspoon mayonnaise

1/4 teaspoon mustard

few drops lemon juice


To “poach” the egg in the microwave just crack it into a small ramekin and pierce the yolk with a knife. Add a little bit of butter to the inside edge of the ramekin (it will help to grease the edges of the ramekin during cooking so it doesn’t stick). Cover with plastic dish cover and microwave for about 1 minute.


In the meantime toast the bagel, mash the avocado and slice the peppers.

Make the mock Hollandaise by mixing the mayonnaise, mustard and lemon juice.

Spread the avocado on both slices of the bagel.

Layer the the smoked trout on one half.

Place the egg on top and drizzle with the Hollandaise sauce.

Put the peppers on the other side of the bagel and assemble.
