Stewed Peach and Plum Overnight Oats

With Winter drawing closer and the mornings getting colder, overnight oats just mightn’t be satisfying enough for everyone. If you love the convenience of them but want something a bit more warming then this stewed fruit and mixed spice version might be for you.

All you need to do is stew some fruit at the beginning of the week, keep it in the fridge and when you’re making your oats in the morning just heat up a spoon or two of this in the mircowave and stir it through your oats (you still make them the night before in the same way). Plum and peach work really well together and because they are naturally sweet there’s no need to add in anything extra – so you won’t get a blood sugar dip mid-morning!

Recipe:

Ingredients:

Stewed Fruit:

  • 1 peach
  • 2 plums
  • 2 tablespoons water
  • pinch of cinnamon

Overnight Oats:

  • 1/2 cup oats
  • 1/2 cup almond milk
  • 1/4 teaspoon mixed spice
  • 1 dessertspoon Greek yoghurt

To make the oats, mix all the ingredients together, cover and leave in the fridge overnight.

To make the stewed fruit, heat the fruit, water and cinnamon in a saucepan over a low heat until it thickens. Store in the fridge if you’re not using it straight away. In the morning heat a spoon or two in the microwave and stir through your oats.
