Banana Cacao Crunch Overnight Oats

Anyone who has ever been food shopping with me will know that for me, stepping into a supermarket is similar to a shoe addict stepping into Brown Thomas – you just kind of lose all rationale and want everything. Recently while buying a coffee in The Gourmet Tart Co. in Galway I spotted this Banana and Vanilla Jam on the shelf and being the impulse buyer that I am I just had to get it (although at €2.80 it didn’t exactly break the bank). It goes really well on toasted pitta bread with some almond butter as a pre-workout snack but it also makes for a really tasty overnight oats flavour.

The ingredient that really takes these to another level are these toasted cacao nibs coated in coconut sugar Iswari. I’ve used these before in my Mayan Morsels and they’re also delicious blended into smoothies, as a porridge topper or even on their own. The coconut sugar gives them a nice crunch and the bitterness of the cacao forms and perfect partnership with the sweetness of the banana and vanilla.

If you happen to have both of these ingredients it makes these overnight oats so simple to make but if you can’t get your hands on the banana jam I’ve included a second version so you don’t miss out!

This would be perfect for anyone who goes to the gym or trains in the mornings as you can just have it in the car for after your workout and the combination of banana, oats and milk (dairy milk would have more protein) make it a perfect recovery meal!

Recipe (using the jam):

Ingredients:

1/2 cup oats

1/2 cup almond milk

1 heaped teaspoon banana and vanilla jam

1 teaspoon toasted cacao nibs

Method:

Mix all ingredients together, cover, leave in fridge overnight. Add more cacao nibs in the morning.

Recipe Version 2:

Ingredients:

55g oats

50g mashed banana (about half a banana)

Just under 1/2 cup almond milk

1 tsp toasted cacao nibs

Method:

Mix all ingredients together, cover, leave in fridge overnight. Add more cacao nibs in the morning.
