On-the-Go Raspberry and Blueberry Chia Pudding

I picked up this really cool little container in Avoca in Dublin a few weeks ago. I’ve never actually browsed around that shop before but it’s amazing! If I had the money I’d probably kit out my whole house with their stuff but actually spent most of my time in their book section. I ended up buying one by a guy called Dale Pinnock, otherwise known as the Medicinal Chef, which I’m working my way through at the moment, however I’m a pathetically slow reader so it may be a while before I can share my thoughts on it! But it’s a good read as I’m a huge believer in the fact that food plays a huge role in our physical health so can’t wait to finish it.

It’s designed for bringing yogurt and toppings on the go with you but I found it works really well for overnight oats and chia pudding which is what I’ve made here. Just mix the ingredients the night before, leave in the fridge and in the morning just stick it in your bag and take it to work. It’s super handy if you have breakfast on the go but also makes it really easy to bring a healthy snack with you.

I made this raspberry and blueberry overnight chia pudding with some Bowl-a-Granola granola and fresh blueberries for an 11 o’clock snack but it’s equally as nice as a breakfast or even for a “clean-treat” at night.

Raspberry and Blueberry Chia Pudding:

1/4 cup milk (of choice)

1/4 cup yogurt

1/8 cup chia seeds

1 tsp vanilla extract

1 tsp maple syrup

A few blueberries and raspberries

1-2 tablespoons granola

Method:

Mix together the milk, yogurt, chia seeds, vanilla extract and maple syrup.

Add in some raspberries and blueberries.

Leave overnight in the fridge (if you’re making it on the day then you can eat it straight away but best to leave it for about 30 minutes to thicken slightly – this also makes a great healthy dessert).

In the morning just grab and go and when you’re ready to eat just stir in your toppings!
