Slices of apple or banana covered in peanut butter are a firm favourite among fitness enthusiasts and health nuts. However, you have to have fairly strong willpower to stop yourself consuming half the tub in one sitting…at least I do anyway! Peanut butter is high in calories so even if you are just spreading a little bit on each slice it does all add up.
To solve this problem here’s a delicious recipe for a lighter version of a peanut butter dip. By mixing it with Greek yoghurt you end up using a lot less peanut butter. Also, by adding in a bit of maple syrup and cinnamon you end up with a deliciously flavourful dip which keeps well in the fridge for a few days.
Ingredients (makes about 3-4 portions):
170g Greek yoghurt
60g (about 1 tablespoon) unsweetened peanut butter
1/2 tablespoon maple syrup
1/8 teaspoon cinnamon
Blend all ingredients together.
Serve with apple slices.
Store leftovers in fridge.
