Overnight Oats

This is a super quick and easy recipe that was given to me by my sister who is living in France on Erasmus. She only has one of those tiny fridges in her room and shares a kitchen with her whole floor so having limited resources found this to be perfect. It also gives her those precious extra few minutes in bed.

The banana and oats are are a great energy provider, the chia seeds provide protein and the cacao powder is a great source of iron, vitamin C, antioxidants, chromium, zinc and sulfur so this is a real healthy start to the day!

To make, simply mix all the ingredients together, cover with clingfilm and then leave in the fridge overnight. In the morning you can eat as is or top with some crushed nuts and seeds, some berries, honey, fruit or shredded coconut, whatever you like really!

Ingredients:
1 banana (mashed)
1-3 tablespoons milk of your choice (e.g. dairy, almond, coconut) (adjust the amount you add to change the consistency)
3 tablespoons oats
1 tablespoon cacao powder
1 teaspoon chia seeds

Method:
Mash the banana, add the milk then oats. Stir in the cacao powder and chia seeds. Cover with clingfilm. Leave in fridge overnight.
